Comfortable Flavors and Familiar Aromas
Chef Jesse Souder incorporates recipes that were popular in 1940s and 1950s into the menu, such as casseroles and other comfort foods. However, recipes of this era were often based on convenience and not necessarily nutrition. Chef Souder selects favorite dishes, such as a tuna casserole, but creates a healthier version, using fresh tuna and vegetables to create a recipe that feels like home but is still nutritious and fresh tasting.
Serving quality food and creating interesting and original menus is an expression of Chef Souder’s appreciation and love to his residents and his families. Getting to know residents on a personal level allows the dining staff at Provision Living at Columbia to create meals that can help them reconnect with their past and also let them explore new flavors and tastes.
Garden to Table Freshness at Provision Living at Columbia
Our dining team creates each dish from scratch, every day. You won’t find frozen or canned food at our community. We stock our pantry with the freshest produce available and focus on including seasonal ingredients <<such as>> whenever possible.
Some of our resident-favorite dishes include:
- Petite filet mignon
- Parmesan encrusted tilapia
- Stuffed bell peppers
- Grilled salmon
These entrees are paired with delicious sides dishes, such as whipped Yukon gold potatoes, fresh asparagus, and dill buttered carrots.
Incredible dessert items are made from scratch as well: lemon meringue pie, carrot cake, Oreo chocolate cake, fresh apple pies, and root beer floats, just to name a few!
